Seasonal June Yellow Hairy Crab from the Yangcheng Lake region — thin shell, tender meat, and abundantly flowing roe, a limited summer delicacy. Hand-selected whole crabs, weighed free of string, 1.8-2.5 taels (90-125g) each, with roe content far exceeding ordinary crabs.

Cooking & Application

Its buttery flowing roe is sweet and rich without greasiness — best for spicy crab, flour-coated crab, and rice-cake stir-fry. Spicy crab is numbing-hot; flour-coated crab is crisp outside; rice cake soaks up the roe.

Storage

Keep live crabs refrigerated at 4-10°C and consume soon; cover with a damp towel to retain moisture. Do not eat dead crabs. If storing briefly, bind and refrigerate, best within 2 days.
