Overview

Premium egg-bearing female mantis shrimp (stomatopod, 'sea lobster'). Plump juicy flesh with abundant roe — the 'foie gras of the sea.' Extra-large grade 17-20 pieces per jin; each hand-sorted to remove empty shells, keeping only fully-roe specimens.

Cooking & Application

Best: steamed (pure flavor), salt-pepper (crisp outside, tender inside), scallion-ginger stir-fry (wok hei), or raw-marinated. Steaming shows the sweetest bite; salt-pepper is crunchy; stir-fry has wok hei; raw-cure is chilling.

Storage

Store frozen at -18°C or below. Avoid repeated thawing. Cook soon after thawing; reseal and refrigerate leftovers and use within 24 hours.
